This is a recipe from a friend’s mum in New Zealand.
Ingredients
- 2 C flour
- 3 tsp baking powder
- ⅓ C sugar
- ¼ tsp salt
- 1 C blueberries/fruit
- 1 C milk
- ⅓ C vegetable oil
- 1 egg (in the US use an extra large egg)
Method
- Preheat oven to 200°C.
- Sift dry ingredients together in a bowl, then add sugar, salt, fruit.
- In a separate bowl beat the oil, eggs and milk together. Add to the dry ingredients and stir.
- Fill muffin pans ¾ full.
- Bake for 20 minutes or until they have risen and are golden.
Variations
Use tinned (aka canned) fruit, substituting the syrup from the tin for the milk.
