This is a recipe from a friend’s mum in New Zealand.

Ingredients

  • 2 C flour
  • 3 tsp baking powder
  • ⅓ C sugar
  • ¼ tsp salt
  • 1 C blueberries/fruit
  • 1 C milk
  • ⅓ C vegetable oil
  • 1 egg (in the US use an extra large egg)

Method

  1. Preheat oven to 200°C.
  2. Sift dry ingredients together in a bowl, then add sugar, salt, fruit.
  3. In a separate bowl beat the oil, eggs and milk together. Add to the dry ingredients and stir.
  4. Fill muffin pans ¾ full.
  5. Bake for 20 minutes or until they have risen and are golden.

Variations

Use tinned (aka canned) fruit, substituting the syrup from the tin for the milk.
